Hi Fellow Ageless Boomer!
As most active Baby Boomers, I am watching my weight. I know that with age comes the ‘gravity – muffin spread’ and I hate it!
I recently lost 12 lbs. after seeing a picture of myself my hubby took when we were in Maui this year. I was aghast as looked like a Manatee
I truly thought I was eating low-cal healthy!
I had toast or cereal with my coffee for breakfast; often forgot lunch and then ravenously stuffed my face with chips, cheese, carrots and/or nuts with my glass of white wine around 4pm.
My hubby, Glen, is the ‘foody’ of the family and does most of the cooking with dinner around 7:30pm which always contained a protein (chicken, fish, beef, pork etc.) with vegetables plus a carb (rice, potatoes) in some sort of yummy spicy sauce.
My son, Ryan & his beautiful Bride Katrina Xavier, were getting married in Tuscany, Italy in Sept. 2018 so this was definitely an incentive for me to lose the weight. There was no way they were going to take photos of a FAT MERMA!
I looked around the internet for diet help and joined LiveStrong.com. I documented my daily caloric intake and was amazed at the calories in the foods I was eating! I weighed myself every day – cruelty and motivation in that! I never stopped myself from eating anything I just downsized all my meals, upped my activity and learned to make better choices…
Did I want that piece of dark chocolate or
a glass of white wine after dinner?
The dilemma has always been that I love to eat the comfort food I grew up on like: Chili, Turkey with stuffing or Roast Beef with mashed potatoes and gravy; Chicken Pot Pie; Rouladen; Spaghetti & Meatballs; Lasagna with tons of cheese and Caesar Salad – I am getting hungry just writing that down!
We had friends over for dinner and this was the motivation I needed to find and make a ‘comfort food’ recipe with a twist on its presentation and calories. I found ‘Lasagna roll-ups‘ from All Recipes.com and modified them a bit to suit our tastes. Everyone raved about them!

Here are the items I substituted:
- Neither Glen nor I like tofu so I used 1 lb
of ground turkey sautéed with onions, garlic, minced black olives and Italian seasoning. - I used low fat dry curd cottage cheese instead of ricotta
- I used fresh spinach leaves laid on the bed
ofcheese & meat sauce then rolled them up and used the remaining saucetosurround them in the pan.
At the end of the cooking time, I topped them with a small amount of grated Havarti cheese and broiled them for a couple minutes till brown, bubbly and yummy! Served with homemade garlic bread (small amount of margarine) and a healthy green salad.
This time I was much happier being photographed at
my son’s wedding in Tuscany this past September!
